Stuffed Peppers with Eggs and Mozzarella

Ingredients
- 2 piece bell peppers
- 4 piece eggs
- 125 g mozzarella
- 100 g cherry tomatoes
- 6 leaf fresh basil
Instructions
Step 1
Preheat oven to 190°C. Cut peppers in half lengthwise and remove the seeds.
Step 2
Place pepper halves in a baking dish. Distribute diced mozzarella and halved cherry tomatoes in each half.
Step 3
Crack an egg into each pepper half, then season with salt and pepper.
Step 4
Bake for 20 minutes until eggs are cooked and cheese is melted. Garnish with fresh basil.
