Lentil, Carrot and Spinach Skillet
A colorful and balanced skillet combining cooked lentils, sautéed carrots and fresh spinach. A complete meal ready in 25 minutes.

Ingredients
- 250 g Cooked red lentils
- 3 piece Carrots
- 200 g Fresh spinach
- 3 tbsp Olive oil
- 0.5 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Peel and cut the carrots into sticks or small dice
Step 2
Heat the olive oil in a skillet and sauté the carrots for 8 minutes
Step 3
Add the cooked lentils and let warm through for 3 minutes
Step 4
Add the fresh spinach and stir until it wilts (about 2 minutes)
Step 5
Season with salt and pepper and mix well
Step 6
Serve hot
