Italian Pan-Fried Potatoes, Lentils and Tomatoes
A hearty Italian skillet with potatoes, lentils, fresh tomatoes, and spinach. A complete and delicious one-pan meal that's satisfying and easy to prepare.

Ingredients
- 500 g Potatoes
- 150 g Green lentils
- 400 g Canned tomatoes
- 2 piece Carrots
- 150 g Fresh spinach
- 3 tbsp Olive oil
- 2 clove Garlic
- 1 tsp Herbes de Provence
- 300 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the potatoes into cubes, slice the carrots into rounds, and mince the garlic.
Step 2
Heat the oil in a skillet and sauté the garlic for 1 minute, then add potatoes and carrots. Cook for 8 minutes.
Step 3
Add the lentils, tomatoes with their juice, water, and herbs. Simmer for 15 minutes.
Step 4
Add the spinach, stir well, and cook for 2 minutes. Season to taste and serve.
