Crispy Chickpea Skillet with Spinach and Tomatoes
Chickpeas pan-roasted until crispy, combined with tender spinach and burst cherry tomatoes. A quick Mediterranean dish.

Ingredients
- 400 g Canned chickpeas
- 200 g Fresh spinach
- 150 g Cherry tomatoes
- 2 clove Garlic
- 1 tbsp Olive oil
- 1 tsp Smoked paprika
Instructions
Step 1
Drain and rinse the chickpeas, pat dry with a kitchen towel. Cut the cherry tomatoes in half.
Step 2
Heat the olive oil in a large skillet over high heat. Add the chickpeas and cook for 8 minutes without stirring too much so they become crispy.
Step 3
Add the minced garlic, cherry tomatoes and smoked paprika. Cook for 4 minutes until the tomatoes burst.
Step 4
Add the spinach, stir until wilted and serve.
