Pan-Seared Mackerel with Eggplant and Turmeric
Mackerel fillets pan-seared with silky turmeric-spiced eggplant and onions, an Indian-inspired dish rich in omega-3s.

Ingredients
- 2 pieces mackerel fillets
- 1 piece eggplant
- 1 piece onion
- 1 tsp ground turmeric
- 2 tbsp olive oil
- 1 pinch salt and pepper
Instructions
Step 1
Cut the eggplant into 2 cm cubes and slice the onion.
Step 2
Heat oil in a large skillet. Sauté the onion and eggplant with turmeric for 12 minutes over medium heat, stirring occasionally.
Step 3
Push vegetables to the sides, place mackerel fillets in the pan, and cook 4 minutes per side.
Step 4
Season with salt and pepper, then serve the mackerel over the turmeric vegetables.
