Pan-Seared Pollock with Green Beans and Tomatoes
Pollock fillets pan-seared with crispy green beans and garlic-infused roasted tomatoes, a quick Provençal dish.

Ingredients
- 2 piece Pollock fillet
- 250 g Green beans
- 2 piece Tomatoes
- 2 clove Garlic
- 2 tbsp Olive oil
- 1 tsp Herbes de Provence
Instructions
Step 1
Trim the green beans, dice the tomatoes, and mince the garlic.
Step 2
Heat the oil in a large pan. Sear the pollock fillets for 3 minutes per side, then set aside.
Step 3
In the same pan, sauté the green beans for 5 minutes, add the tomatoes, garlic, and herbs, cook for 3 minutes.
Step 4
Return the fish to the pan over the vegetables, cover for 2 minutes, and serve.
