Lentil and Spinach Skillet
A simple and satisfying dish that works wonderfully as a side or light main course. Lentils and spinach are a perfect pairing.

Ingredients
- 150 g Green lentils
- 120 g Fresh spinach
- 1 piece Carrots
- 350 ml Water
- 2 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Black pepper
Instructions
Step 1
Peel and cut the carrot into fine dice.
Step 2
Heat the olive oil in a skillet, add the carrot dice, and sauté for 2 minutes.
Step 3
Add the green lentils and water, bring to a boil.
Step 4
Reduce heat and simmer for 15 minutes until the lentils are cooked through but still intact.
Step 5
Add the spinach and stir until wilted, cook for 2 minutes.
Step 6
Season with salt and pepper, and serve hot.
