Pan-Fried Halloumi with Tikka Eggplant
Cubed halloumi and eggplant sautéed with tikka masala spices and fresh tomatoes. A bold fusion of Indian and Mediterranean flavors.

Ingredients
- 200 g Halloumi
- 1 piece Eggplant
- 2 pieces Tomatoes
- 2 tsp Tikka masala powder
- 1 tbsp Olive oil
- 2 tbsp Fresh cilantro
Instructions
Step 1
Cut the halloumi and eggplant into 2 cm cubes. Cut the tomatoes into wedges.
Step 2
Heat the oil in a large pan over high heat. Sear the halloumi cubes for 3 minutes, turning them. Set aside.
Step 3
In the same pan, cook the eggplant for 6 minutes over medium-high heat. Add the tomatoes and tikka masala powder, cook for 3 minutes.
Step 4
Return the halloumi, gently mix, sprinkle with fresh cilantro and serve.
