Pan-Fried Halloumi with Roasted Cauliflower and Zaatar
Golden halloumi served with caramelized roasted cauliflower florets, seasoned with Lebanese zaatar. A simple yet addictive Middle Eastern dish.

Ingredients
- 200 g halloumi
- 300 g cauliflower
- 1 piece zucchini
- 2 tsp zaatar
- 1.5 tbsp olive oil
- 1 tbsp lemon juice
Instructions
Step 1
Cut the cauliflower into small florets, dice the zucchini, and cube the halloumi.
Step 2
Heat 1 tbsp oil in a large pan over medium-high heat. Brown the cauliflower florets for 8 minutes, stirring regularly.
Step 3
Add the zucchini and cook for 4 minutes. Push the vegetables to the sides, add a drizzle of oil, and sear the halloumi in the center for 2 minutes on each side.
Step 4
Sprinkle with zaatar, drizzle with lemon juice, gently toss, and serve.
