Beef Teriyaki Stir-Fry with Eggplant and Green Onions
Slices of beef glazed in homemade teriyaki sauce, stir-fried with tender eggplant and green onions. A savory Japanese-inspired dish that's low in carbs.

Ingredients
- 350 g striploin beef
- 1 piece eggplant
- 4 pieces green onions
- 2 tbsp soy sauce
- 1 tbsp mirin
- 2 tbsp vegetable oil
- 1 tsp fresh grated ginger
Instructions
Step 1
Slice the beef thinly. Cut the eggplant into 2 cm cubes. Slice the green onions.
Step 2
Heat 1 tablespoon of oil in a skillet over high heat. Sear the beef for 2 minutes, then set aside.
Step 3
Add the remaining oil and stir-fry the eggplant cubes for 5 minutes until golden and tender.
Step 4
Return the beef, add the soy sauce, mirin, and ginger. Cook for 2 minutes, coating everything well.
Step 5
Sprinkle with sliced green onions and serve.
