Spinach and Walnut Pkhali
A rich Georgian appetizer: spinach puree blended with butter, crushed walnuts, and spices, served cold over tomatoes.

Ingredients
- 500 g Fresh spinach
- 150 g Crushed walnuts
- 40 g Butter
- 0.5 piece White onion
- 2 clove Garlic
- 20 g Fresh cilantro
- 15 g Fresh dill
- 0.5 tsp Black pepper
- 2 piece Tomatoes
- 1 tsp Salt
Instructions
Step 1
Clean the spinach and cook for 3-4 minutes in boiling salted water.
Step 2
Drain completely and let cool.
Step 3
Finely chop the onion, garlic, cilantro, and dill.
Step 4
Finely crush the walnuts (do not grind into powder).
Step 5
Mix the drained spinach, walnuts, onion, garlic, and herbs.
Step 6
Add the softened butter, pepper, and salt, mix well.
Step 7
Arrange sliced tomatoes on plates and spoon the pkhali over top.
