Mediterranean Penne with Tuna and Cherry Tomatoes

Ingredients
- 400 g Penne
- 300 g Canned tuna
- 250 g Cherry tomatoes
- 100 g Black olives
- 1 whole Fresh lemon
- 2 clove Garlic
- 4 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 15 g Fresh parsley
Instructions
Step 1
Bring salted water to a boil and cook the penne according to package directions.
Step 2
Meanwhile, halve the cherry tomatoes, mince the garlic, and drain the tuna.
Step 3
Squeeze the lemon juice. In a bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.
Step 4
Add the tuna, tomatoes, and olives to the bowl and mix well.
Step 5
Drain the pasta and gently toss with the mixture. Top with fresh parsley and serve.
