Penne with Olives and Roasted Carrots
A simple and delicious Italian-style pasta dish: penne tossed with caramelized carrots and olives, perfect for a quick weeknight meal.

Ingredients
- 250 g Penne
- 3 piece Carrots
- 100 g Olives
- 3 tbsp Olive oil
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots into sticks. Place them on a baking sheet with 2 tbsp of oil, salt, and pepper. Roast at 200°C.
Step 2
Cook the penne in a pot of salted boiling water according to package directions (about 12 minutes).
Step 3
The carrots should be tender and lightly golden after about 18-20 minutes in the oven.
Step 4
Drain the pasta and transfer to a bowl. Add the roasted carrots, olives, and 1 tbsp of oil. Toss gently and serve.
