Penne with Olives and Roasted Carrots

Ingredients
- 350 g Penne
- 3 medium Carrots
- 150 g Olives
- 3 tbsp Olive oil
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Preheat the oven to 200°C. Cut the carrots into sticks, drizzle with olive oil, salt, and pepper.
Step 2
Roast the carrots for 20 minutes until tender and lightly caramelized.
Step 3
Meanwhile, cook the penne in a pot of salted water according to package directions.
Step 4
Drain the pasta and toss with the roasted carrots and olives. Drizzle with a splash of olive oil.
