Penne with Red Pepper and Feta Cream
Creamy penne with a smooth red pepper and feta sauce. Indulgent, Mediterranean-inspired, and ready in 35 minutes.

Ingredients
- 300 g Penne
- 2 medium Red bell peppers
- 150 g Feta
- 150 ml Sour cream
- 1 medium Onion
- 2 cloves Garlic
- 3 tbsp Olive oil
- 2 L Water
- 2 pinches Salt
- 1 pinch Pepper
- 5 leaves Fresh basil
Instructions
Step 1
Bring salted water to a boil and cook the penne according to package directions. Drain and set aside.
Step 2
Meanwhile, dice the bell peppers, slice the onion, and mince the garlic.
Step 3
Sauté the onion and garlic in olive oil in a skillet for 2 minutes.
Step 4
Add the bell peppers and cook for 8 minutes over medium heat until softened.
Step 5
Blend the skillet contents with the sour cream to create a smooth sauce.
Step 6
Pour the sauce over the penne, crumble the feta on top, and add the basil. Toss well and serve.
