Vegetarian Penne Carbonara
A simplified Italian classic with eggs, Gruyère, and olives in place of bacon. Creamy and delicious in 20 minutes.

Ingredients
- 250 g Penne
- 2 piece Eggs
- 60 g Gruyère
- 80 g Olives
- 1 pinch Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instructions
Step 1
Bring a saucepan of salted water to a boil and cook the penne according to package instructions.
Step 2
Meanwhile, beat the eggs with the grated Gruyère, pepper, and chopped olives.
Step 3
Drain the pasta, reserving a glass of cooking water.
Step 4
Pour the hot pasta into a bowl, add the egg mixture and toss quickly, adding a little cooking water to create a creamy sauce.
Step 5
Serve immediately with a drizzle of olive oil.
