Vegetarian Carbonara Pasta (Egg-Free)
A simplified, dairy-free take on carbonara featuring pasta in a creamy coconut milk sauce with smoky flavors.

Ingredients
- 250 g Pasta
- 200 ml Coconut milk
- 2 tbsp Nutritional yeast
- 1 tbsp Olive oil
- 2 clove Garlic
- 15 g Parsley
- 1 pinch Salt
- 1 pinch Pepper
- 2 l Water
Instructions
Step 1
Bring water to a boil in a pot and cook the pasta according to package directions (usually 10-12 minutes).
Step 2
Meanwhile, finely chop the garlic and parsley.
Step 3
Heat the oil in a pan and lightly brown the garlic for about 1 minute.
Step 4
Add the coconut milk and nutritional yeast to the pan. Stir and heat for 2 minutes without boiling.
Step 5
Drain the pasta and add to the sauce. Season with salt and pepper. Toss gently.
Step 6
Plate and garnish with fresh parsley.
