Vegetarian Carbonara Pasta
A true carbonara without bacon, where Gruyère cheese partially replaces Parmesan for a creamy and delicious sauce.

Ingredients
- 200 g Pasta
- 2 piece Eggs
- 60 g Grated Gruyère
- 1.5 l Water
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
- 150 g Cherry tomatoes
- 1 clove Garlic
Instructions
Step 1
Cook the pasta in salted boiling water according to the package instructions.
Step 2
Meanwhile, beat the eggs with the grated Gruyère, salt, and pepper.
Step 3
Crush the garlic and sauté it in a pan with butter. Add the halved cherry tomatoes and cook for 2 minutes.
Step 4
Drain the pasta (reserving a glass of cooking water) and pour it into the pan with the tomatoes. Remove from heat.
Step 5
Add the egg-Gruyère mixture and stir well. Add a little cooking water if needed for a creamy sauce. Serve immediately.
