Pasta Carbonara with Crispy Quinoa and Apples
A gourmet take on classic carbonara with crispy bacon, eggs and Parmesan, completed with crispy quinoa and caramelized apples.

Ingredients
- 200 g Pasta
- 100 g Ham
- 2 piece Eggs
- 50 g Parmesan
- 50 g Quinoa
- 1 piece Apples
- 20 g Butter
- 15 ml Olive oil
- 10 ml Honey
- 5 g Salt
- 2 pinch Pepper
Instructions
Step 1
Cook the quinoa according to package directions, drain and toast in a pan for 3 minutes with a little oil.
Step 2
Boil salted water and cook the pasta al dente.
Step 3
Cook the diced ham in a pan until crispy, add the apple cubes with honey and butter and cook for 5 minutes.
Step 4
Beat the eggs with grated Parmesan and pepper.
Step 5
Toss the hot pasta with the egg and Parmesan mixture without cooking further, add the ham and apple mixture.
Step 6
Plate and garnish with crispy quinoa.
