Creamy Pasta Carbonara with Broccoli

Ingredients
- 250 g Pasta
- 200 g Broccoli
- 100 g Ham
- 60 g Parmesan
- 40 g Gruyère
- 100 ml Sour cream
- 2 piece Eggs
- 15 ml Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the pasta in salted water. 2 minutes before the end, add the broccoli cut into small florets. Drain while reserving 100 ml of cooking water.
Step 2
Meanwhile, dice the ham and sauté for 1-2 minutes in a pan with olive oil.
Step 3
In a bowl, mix the eggs, sour cream, grated Parmesan and Gruyère.
Step 4
Pour the pasta and broccoli into the pan with the ham and remove from heat.
Step 5
Add the egg-cream-cheese mixture and stir quickly with a bit of cooking water to create a creamy sauce. Season with salt and pepper.
