Spinach and Caramelized Apple Carbonara Pasta
A delicious twist on carbonara featuring spinach for extra vegetables and sweet caramelized apple pieces for a sweet-savory combination. A perfect dinner dish.
Ingredients
- 250 g Pasta
- 150 g Spinach
- 100 g Ham
- 60 g Parmesan
- 2 piece Eggs
- 200 g Apples
- 40 g Butter
- 20 g Sugar
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Peel and cut the apples into small dice.
Step 2
In a skillet, melt 20g of butter, add the apples and sugar, and let caramelize for 8 minutes, stirring occasionally.
Step 3
Boil salted water and cook the pasta.
Step 4
Beat the eggs with grated Parmesan, salt and pepper.
Step 5
Quickly sauté the diced ham and spinach in a skillet with 20g of butter.
Step 6
Drain the pasta, reserving a glass of cooking water.
Step 7
Mix the hot pasta with the egg-Parmesan mixture off the heat, add the ham-spinach mixture and a little cooking water.
Step 8
Serve topped with the caramelized apples.
