Pasta Burro e Pepe (Lentil Version)
A simple take on the classic Roman dish where red lentils replace pecorino for a creamy vegetarian version.

Ingredients
- 200 g Pasta (spaghetti or penne)
- 80 g Red lentils
- 800 ml Water
- 30 g Butter
- 2 tsp Black pepper
- 1 pinch Salt
Instructions
Step 1
Cook the lentils for 8 minutes in boiling water.
Step 2
Add the pasta and cook for an additional 10 minutes.
Step 3
Drain while reserving some cooking water.
Step 4
Toss with butter and black pepper. Add a little water if too dry.
