Simple Lentil Bolognese
A homemade bolognese where lentils partially replace meat for a rich, flavorful, and budget-friendly sauce. A reinvented classic.

Ingredients
- 400 g Pasta
- 200 g Red lentils
- 400 g Crushed tomatoes
- 1 piece Onion
- 2 cloves Garlic
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 1 tsp Herbes de Provence
Instructions
Step 1
Finely chop the onion and garlic.
Step 2
Rinse the red lentils.
Step 3
Heat the oil in a skillet and sauté the onion and garlic for 2 minutes.
Step 4
Add the lentils and crushed tomatoes. Mix well.
Step 5
Add the Herbes de Provence, salt, and pepper. Simmer for 15 minutes.
Step 6
Meanwhile, cook the pasta according to package instructions.
Step 7
Drain the pasta and serve with the bolognese sauce.
