Pasta with Walnuts and Roasted Carrots

Ingredients
- 400 g Pasta
- 300 g Carrots
- 100 g Walnuts
- 50 g Butter
- 5 g Salt
- 2 g Pepper
- 30 ml Olive oil
Instructions
Step 1
Preheat the oven to 200°C and cut the carrots into batons.
Step 2
Coat the carrots with olive oil, salt, and pepper. Roast in the oven for 20 minutes.
Step 3
Roughly crush the walnuts using a food processor or by hand.
Step 4
Cook the pasta in a pot of boiling salted water according to package instructions.
Step 5
Melt the butter in a skillet until it turns nutty brown, then add the walnuts.
Step 6
Drain the pasta and toss with the walnut butter and roasted carrots. Season to taste.
