Pasta with Homemade Spinach and Walnut Pesto

Ingredients
- 300 g Pasta (fusilli or penne)
- 150 g Fresh spinach
- 80 g Walnuts
- 2 cloves Garlic
- 60 g Grated cheese (Parmesan)
- 80 ml Olive oil
- 1 tsp Salt
- 1 pinch Pepper
- 1 tbsp Lemon juice
Instructions
Step 1
Cook the pasta in boiling salted water according to package instructions (about 10 minutes)
Step 2
Meanwhile, add the fresh spinach, walnuts, and peeled garlic to a food processor
Step 3
Blend until you reach a coarse paste
Step 4
Gradually add the olive oil while blending to achieve a pesto texture
Step 5
Stir in the grated cheese and lemon juice, season with salt and pepper
Step 6
Drain the pasta and toss with the pesto
Step 7
Serve immediately, generously coated with pesto
