Asian Pasta with Crispy Potatoes and Peanut-Orange Sauce
A creative Asian fusion dish with pasta, crispy sautéed potatoes and a rich peanut-orange sauce full of umami flavors. Additional ingredients: soy sauce, peanuts, ginger, garlic, chili.
Ingredients
- 300 g pasta
- 400 g potatoes
- 100 g nuts
- 1.5 piece oranges
- 150 g carrots
- 4 tbsp oil
- 3 tbsp soy sauce
- 100 g ground peanuts
- 15 g fresh ginger
- 3 clove garlic
- 1 piece red chili
- 1 l water
- 1 tbsp sugar
- 1 pinch salt
Instructions
Step 1
Cut the potatoes into small cubes and boil for 8 minutes, drain.
Step 2
Fry the potatoes in 2 tbsp oil until golden and crispy, set aside.
Step 3
Cook the pasta in salted water according to directions, drain.
Step 4
Squeeze the orange and mix the juice with soy sauce, ground peanuts, sugar and 50ml water.
Step 5
Sauté minced garlic, ginger and chili in 2 tbsp oil for 1 minute.
Step 6
Pour the peanut-orange sauce, add grated carrots and simmer for 3 minutes.
Step 7
Toss the pasta with the sauce, add the crispy potatoes and crushed nuts.
