Asian Noodles with Vegetables and Peanuts
A wok of noodles inspired by Thai cuisine, with a savory peanut sauce and whatever vegetables you have on hand. Quick and delicious.

Ingredients
- 300 g Rice or egg noodles
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 3 tbsp Peanut butter
- 3 tbsp Soy sauce
- 150 ml Hot water
- 2 tbsp Olive oil
- 1/2 piece Lemon
- 1 clove Garlic
Instructions
Step 1
Cook the noodles according to package directions, drain and set aside.
Step 2
Peel and cut the carrots and celery into thin sticks. Mince the garlic.
Step 3
Heat the oil in a pan or wok over high heat and sauté the garlic for 30 seconds.
Step 4
Add the carrots and celery, cook for 3-4 minutes stirring constantly.
Step 5
Add the spinach and cooked noodles, mix well.
Step 6
Dilute the peanut butter in hot water with the soy sauce and lemon juice.
Step 7
Pour the sauce over the noodles, mix well and cook for 2 minutes.
