Pasta with Tomato Sauce and Roasted Vegetables
Simple pasta with a homemade tomato sauce enhanced with roasted carrots. Topped with fresh mozzarella for added indulgence.

Ingredients
- 300 g Pasta
- 200 g Carrot
- 400 g Crushed tomatoes
- 1 piece Onion
- 150 g Mozzarella
- 3 tbsp Olive oil
- 1 clove Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and thinly slice the carrots. Mince the onion and garlic.
Step 2
Sauté the onion and garlic in a pan with olive oil for 2 minutes.
Step 3
Add the carrots and cook over medium heat for 5 minutes.
Step 4
Pour in the crushed tomatoes, season with salt and pepper, and simmer for 10 minutes.
Step 5
Meanwhile, cook the pasta in salted boiling water according to package instructions.
Step 6
Drain the pasta and combine with the sauce. Toss gently.
Step 7
Serve the pasta with fresh mozzarella cubes on top.
