Simple Carbonara Pasta
An indulgent carbonara made without cream—just eggs, Parmesan, and ham for a rich and silky sauce. Ready in 20 minutes.

Ingredients
- 400 g Pasta
- 200 g Ham
- 120 g Parmesan
- 4 piece Eggs
- 2 tbsp Olive oil
- 2 l Water
- 1 pinch Salt
- 1 pinch Pepper
- 2 clove Garlic
Instructions
Step 1
Bring salted water to a boil and cook the pasta according to package directions, about 10 minutes.
Step 2
Meanwhile, cut the ham into lardons. Beat the eggs with grated Parmesan, salt and pepper.
Step 3
Sauté the ham in the skillet with olive oil over medium heat for 2 minutes.
Step 4
Drain the pasta, reserving a glass of cooking water. Pour it into the skillet with the ham. Remove from heat and quickly stir in the egg mixture, adding a splash of pasta water if needed.
Step 5
Serve immediately with extra Parmesan.
