Vegetarian Carbonara Pasta with Smoked Tofu Lardons
A vegan-friendly take on carbonara made with simple pantry staples enriched with smoked tofu and sour cream. Creamy and savory.

Ingredients
- 250 g Penne
- 150 g Smoked tofu
- 80 g Gruyere
- 150 ml Sour cream
- 1 clove Garlic
- à volonté Pepper
- à volonté Salt
- 1 tbsp Olive oil
- 1 l Water
Instructions
Step 1
Bring salted water to a boil and cook the penne according to package directions.
Step 2
Meanwhile, cut the smoked tofu into batons and brown it in a pan with olive oil for 4 minutes.
Step 3
Add the crushed garlic and sauté for 1 minute, then pour in the sour cream and stir.
Step 4
Grate the Gruyere and add it to the cream, let it thicken for 2 minutes without boiling.
Step 5
Drain the pasta reserving some cooking water. Pour the pasta into the sauce, toss and serve with a crack of fresh pepper.
