Vegetarian Mushroom Carbonara Pasta
A delicious vegetarian take on Italian carbonara with mushrooms replacing the bacon, creamy sauce, and Gruyère cheese. Tasty and simple.

Ingredients
- 400 g Pasta
- 100 g Grated Gruyère
- 2 tbsp Olive oil
- à volonté pinch Salt
- à volonté pinch Pepper
- 300 g Button mushrooms
- 150 ml Crème fraîche
- 2 clove Garlic
- 2 piece Eggs
Instructions
Step 1
Cook the pasta in a pot of salted water according to package instructions.
Step 2
Clean and slice the mushrooms thinly. Mince the garlic.
Step 3
Sauté the mushrooms and garlic in a pan with oil until fully cooked (8-10 minutes).
Step 4
Pour the crème fraîche into the pan with the mushrooms, add the beaten eggs and Gruyère. Mix off the heat.
Step 5
Drain the pasta and pour it into the sauce. Mix well. Season with salt and pepper. Serve immediately.
