Simplified Carbonara Pasta
An easy take on classic Italian carbonara with ham, egg, and Gruyère that creates a creamy sauce without heavy cream.

Ingredients
- 300 g Pasta
- 120 g Ham
- 80 g Gruyère
- 3 pieces Egg
- 1.5 liter Water
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Bring salted water to a boil and cook the pasta according to package directions.
Step 2
Meanwhile, dice the ham and grate the Gruyère.
Step 3
In a bowl, whisk the eggs with the grated cheese, salt, and pepper.
Step 4
Drain the pasta, reserving a glass of cooking water.
Step 5
Mix the hot pasta with the ham, then add the egg and cheese mixture off the heat. Add some pasta water to create a creamy sauce.
