Simplified Carbonara Pasta with Carrots and Mushrooms
A generous take on classic Italian carbonara featuring ham, mushrooms, and carrots, while maintaining the creamy Gruyère sauce.

Ingredients
- 400 g Pasta (spaghetti or penne)
- 200 g Ham
- 200 g Carrots
- 250 g Button mushrooms
- 150 g Grated Gruyère
- 2 piece Eggs
- 30 g Butter
- 2 L Water
- 2 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Bring a pot of salted water to a boil and cook the pasta according to package directions.
Step 2
Meanwhile, peel and dice the carrots into small pieces. Clean and slice the mushrooms. Cut the ham into small pieces.
Step 3
Sauté the ham, carrots, and mushrooms in butter in a skillet for 7-8 minutes. Season with salt and pepper.
Step 4
Whisk the eggs with the grated Gruyère in a bowl.
Step 5
Drain the pasta and add it to the skillet with the mushrooms and ham, then pour the egg-Gruyère mixture while stirring constantly off the heat for a few seconds.
