Simplified Carbonara Pasta with Broccoli
A reimagined carbonara featuring broccoli for added vegetables, using smoked ham instead of traditional guanciale for an everyday version.
Ingredients
- 400 g Pasta (spaghetti or penne)
- 300 g Broccoli
- 150 g Smoked ham
- 100 g Grated Gruyère
- 3 pieces Eggs
- 2 cloves Garlic
- 3 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 10 g Fresh parsley
Instructions
Step 1
Bring a pot of salted water to boil. Cook the pasta according to package directions, adding broccoli florets 2 minutes before the end.
Step 2
Dice the smoked ham into small pieces. Mince the garlic finely and chop the parsley.
Step 3
In a bowl, whisk together the eggs with the grated Gruyère, season generously with salt and pepper.
Step 4
Heat the olive oil in a large skillet, sauté the garlic for 30 seconds, then add the ham.
Step 5
Drain the pasta and broccoli (reserving 200 ml of cooking water). Add to the skillet and remove from heat.
Step 6
Pour the egg mixture in while stirring constantly, adding cooking water gradually to create a creamy sauce. Garnish with parsley and serve.
