Simplified Carbonara Pasta
A take on Italian carbonara with ham and Gruyère for a rich and flavorful dish without cream. Topped with olives for extra indulgence.

Ingredients
- 400 g Small pasta shells
- 200 g Ham
- 120 g Gruyère
- 100 g Olives
- 2 pieces Eggs
- 30 g Butter
- 100 ml Sour cream
- 1 pinch Salt
- 1 pinch Pepper
- 2 l Water
Instructions
Step 1
Bring salted water to a boil and cook the pasta according to instructions (10-12 minutes).
Step 2
Meanwhile, dice the ham and olives into small pieces.
Step 3
Grate the Gruyère and beat the eggs with the sour cream, salt, and pepper.
Step 4
Sauté the ham and olives in a skillet with butter for 2-3 minutes.
Step 5
Drain the pasta and add it to the skillet with the ham.
Step 6
Add the egg-cream mixture and Gruyère, mix quickly off the heat.
