Simplified Carbonara Pasta
A lighter take on the classic Italian carbonara with ham, eggs, and cheese. A timeless favorite ready in 20 minutes.

Ingredients
- 400 g Pasta
- 150 g Ham
- 3 unit Eggs
- 80 g Grated Parmesan
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the pasta in boiling salted water according to package directions. Drain, reserving 200 ml of pasta water.
Step 2
Meanwhile, dice the ham into small pieces.
Step 3
In a bowl, whisk together the eggs, Parmesan, salt, and pepper.
Step 4
Heat the olive oil in the pot. Add the ham and warm for 1-2 minutes.
Step 5
Add the drained pasta to the ham. Pour in the egg-cheese mixture and stir quickly, adding some pasta water as needed to create a creamy sauce.
