Luxury Carbonara Pasta with Dark Chocolate
An indulgent take on French carbonara: pasta, crispy ham, eggs, cheese, and a subtle hint of dark chocolate that enriches the sauce. A decadent dish ready in 25 minutes.
Ingredients
- 200 g Pasta
- 100 g Ham
- 3 units Eggs
- 60 g Grated Parmesan
- 40 g Grated Gruyère
- 20 g Dark chocolate
- 15 g Butter
- 1 tbsp Olive oil
- 2 l Water
- à volonté pinch Salt
- à volonté pinch Pepper
- 50 ml Crème fraîche
Instructions
Step 1
Cook the pasta in salted water according to the package instructions.
Step 2
Meanwhile, cut the ham into small dice and cook in a pan with olive oil until crispy (5 minutes).
Step 3
In a bowl, whisk the eggs with the Parmesan, Gruyère, crème fraîche, salt, and pepper.
Step 4
Grate or finely chop the dark chocolate and add it to the egg mixture.
Step 5
Drain the pasta, reserving a little cooking water.
Step 6
Remove the pan from heat and add the drained pasta to the crispy ham. Add the butter.
Step 7
Pour the egg and chocolate mixture over the hot pasta off the heat, stirring quickly. If too dry, add a splash of cooking water.
Step 8
Serve immediately on warm plates.
