Gourmet Vegetarian Bolognese Pasta
A rich and savory bolognese made with lentils, tomatoes, mushrooms, and a sprinkle of grated cheese. A comforting and delicious take on a classic.
Ingredients
- 400 g Pasta
- 150 g Red lentils
- 400 g Crushed tomatoes
- 250 g Button mushrooms
- 1 Onion
- 2 clove Garlic
- 100 g Gruyère
- 3 tbsp Oil
- 1 tsp Herbes de Provence
- à goût Salt
- à goût Pepper
Instructions
Step 1
Mince the onion and garlic, then chop the mushrooms.
Step 2
Heat the oil in a skillet and sauté the onion and garlic for 2-3 minutes.
Step 3
Add the chopped mushrooms and cook for 5 minutes until they release their liquid.
Step 4
Add the lentils, crushed tomatoes, and Herbes de Provence.
Step 5
Simmer for 20-25 minutes, stirring occasionally.
Step 6
Meanwhile, cook the pasta in salted boiling water according to package directions.
Step 7
Drain the pasta and mix it with the bolognese sauce.
Step 8
Serve topped with fresh grated Gruyère and freshly ground pepper.
