Parchment-Baked Black Cod with Curry and Spinach

Ingredients
- 2 piece black cod fillets
- 200 g fresh spinach
- 1 piece onion
- 2 tsp curry powder
- 4 tbsp coconut milk
- 1 pinch salt and pepper
Instructions
Step 1
Preheat the oven to 190°C. Thinly slice the onion and rinse the spinach.
Step 2
Divide the spinach and sliced onion between two sheets of parchment paper. Top with the black cod fillets, sprinkle with curry powder, drizzle with coconut milk, and season with salt and pepper.
Step 3
Seal the parchment packets tightly and bake for 18 minutes. Serve immediately.
