Blueberry Panna Cotta
A delicately sweet Scandinavian dessert made with cream and gelatin. Topped with fresh blueberry coulis, it's light and refined.

Ingredients
- 300 ml heavy cream
- 100 ml whole milk
- 3 g gelatin powder
- 40 g vanilla sugar
- 200 g blueberries and strawberries
- 30 g white sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
Step 1
Rehydrate the gelatin in 3 tablespoons of cold water.
Step 2
Heat the milk until simmering, then stir in the gelatin.
Step 3
Pour this mixture over the heavy cream and vanilla sugar, whisk well.
Step 4
Add the vanilla extract and divide among 4 glasses.
Step 5
Refrigerate for at least 4 hours (ideally 8 hours).
Step 6
Prepare the coulis: blend the berries, sugar, and lemon juice. Strain through a sieve.
Step 7
Gently pour the coulis over each panna cotta just before serving.
