Valencian Seafood Paella
An authentic Spanish paella with bomba rice, shrimp, mussels, saffron, and paprika. A festive dish rich in Mediterranean flavors.
Ingredients
- 400 g Bomba rice
- 300 g King prawns
- 400 g Mussels
- 200 g Squid
- 2 piece Onions
- 4 clove Garlic
- 2 piece Red peppers
- 250 g Tomatoes
- 150 g Frozen peas
- 1 l Fish stock
- 200 ml Dry white wine
- 0.5 g Saffron
- 10 g Sweet paprika
- 100 ml Olive oil
Instructions
Step 1
Steep the saffron in 200 ml of warm fish stock
Step 2
Slice the onions and garlic, cut the peppers into strips, and chop the tomatoes
Step 3
Clean the mussels and squid, cut the squid into rings
Step 4
Heat the olive oil in a large paella pan and sauté the onions and garlic
Step 5
Add the peppers, tomatoes, and paprika, then pour in the white wine
Step 6
Add the rice and stir well to coat with oil (2 minutes)
Step 7
Pour in the stock with saffron and simmer without stirring for 18 minutes
Step 8
Add the seafood and peas, continue cooking for 10 minutes
Step 9
Check the cooking: the rice should be creamy and the seafood cooked through
Step 10
Sprinkle with fresh parsley and serve with lemon wedges
