Simplified Pad Thai with Vegetables
An easy version of Asian Pad Thai with everyday ingredients enriched with soy sauce and peanuts. A real treat in 25 minutes.

Ingredients
- 180 g Flat pasta or noodles
- 200 g Carrots
- 150 g Broccoli
- 100 g Ham
- 3 tbsp Olive or peanut oil
- 3 tbsp Soy sauce
- 30 g Crushed peanuts
- à volonté pinch Salt
- à volonté pinch Pepper
- 500 ml Water
Instructions
Step 1
Cook the pasta for 8-10 minutes in salted boiling water. Drain.
Step 2
Meanwhile, cut carrots into batons, broccoli into small florets, and ham into cubes.
Step 3
Heat the oil in a wok or large skillet over high heat.
Step 4
Add carrots and broccoli, stir-fry for 3-4 minutes until tender-crisp.
Step 5
Add the pasta and ham, pour in soy sauce, and mix well for 2-3 minutes.
Step 6
Divide into bowls, sprinkle with crushed peanuts, and serve hot.
