Simple Chicken Pad Thai
A simplified version of this famous Asian dish with chicken, carrots, and peanuts. Savory, lightly sweet and tangy, ready in 25 minutes.

Ingredients
- 350 g Noodles
- 500 g Chicken
- 300 g Carrots
- 1 tsp Curry
- 3 tbsp Oil
- 3 tbsp Soy sauce
- 2 tbsp Honey
- 80 g Peanuts
- 1 piece Fresh lemon
- 1 l Water
- 1 pinch Salt
Instructions
Step 1
Bring salted water to boil and cook the noodles according to instructions. Drain and set aside.
Step 2
Cut the chicken into small dice and the carrots into julienne. Roughly chop the peanuts.
Step 3
Heat the oil in a skillet and stir-fry the chicken for 6 minutes over high heat until cooked through.
Step 4
Add the carrots and curry, cook for 3 minutes. Add the noodles, soy sauce, and honey.
Step 5
Mix well, pour in fresh lemon juice, sprinkle with peanuts, and serve hot.
