Pad Thai with Vegetables and Ham
A simplified Pad Thai made with whatever vegetables you have on hand and a bit of ham for protein. Tasty, quick, and with an extra Asian touch.

Ingredients
- 300 g Rice noodles
- 150 g Ham
- 150 g Carrots
- 200 g Broccoli
- 3 tbsp Soy sauce
- 1 tbsp White vinegar
- 2 tsp Honey
- 2 tbsp Oil
- 2 clove Garlic
- 1 pinch Pepper
Instructions
Step 1
Cook the rice noodles according to package instructions, then drain.
Step 2
Cut the carrots into thin strips, break the broccoli into small florets, and dice the ham.
Step 3
Heat the oil in a pan or wok, add the minced garlic, and cook for 1 minute.
Step 4
Add the carrots and broccoli, and cook for 5 minutes, stirring regularly.
Step 5
Add the noodles, ham, soy sauce, vinegar, and honey. Mix well for 2 minutes. Season with pepper.
