Spinach and Halloumi Omelet Wrap
A thin and fluffy omelet used as a wrap, filled with pan-fried halloumi and fresh spinach. A protein-packed Turkish-style brunch ready in 15 minutes.

Ingredients
- 4 pieces eggs
- 150 g halloumi
- 100 g fresh spinach
- 2 pieces tomatoes
- 1 tsp paprika
- 1 tbsp olive oil
Instructions
Step 1
Beat the eggs with paprika and a pinch of salt. Slice the halloumi thinly and dice the tomatoes.
Step 2
Heat a drizzle of oil in a nonstick skillet. Pour in half of the beaten eggs and cook for 2 minutes to form a thin omelet. Repeat.
Step 3
In the same skillet, grill the halloumi slices for 1 minute on each side.
Step 4
Fill each omelet with fresh spinach, grilled halloumi, and diced tomatoes. Roll and serve.
