Indian-Spiced Omelette Wrap with Spinach and Paneer
A turmeric-spiced omelette wrapped around golden paneer and silky cumin-scented spinach. An inspired take on palak paneer without the naan.

Ingredients
- 4 pieces eggs
- 150 g paneer
- 150 g fresh spinach
- 1 piece onion
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tbsp sunflower oil
Instructions
Step 1
Cut paneer into 1.5 cm cubes. Mince onion finely.
Step 2
Heat oil in skillet. Brown paneer cubes 2 minutes on each side, then set aside.
Step 3
Sauté onion 2 minutes, add cumin and spinach. Cook 3 minutes until spinach wilts.
Step 4
Beat eggs with turmeric. Cook 2 thin omelettes. Fill with spinach and paneer, roll, and serve.
