Turkish-Style Spinach and Mint Omelette
A soft omelette with fresh spinach, creamy cheese, and fresh mint, inspired by Turkish menemen. Light, fragrant, and full of flavor.

Ingredients
- 4 piece eggs
- 120 g fresh spinach
- 2 piece green onion
- 60 g cream cheese
- 6 leaf fresh mint
- 10 g butter
Instructions
Step 1
Slice the green onions and chop the mint. Wilt the spinach in the melted butter for 2 minutes.
Step 2
Beat the eggs with cream cheese, mint and green onions. Season with salt and pepper.
Step 3
Pour the egg mixture over the spinach in the skillet.
Step 4
Cook over low heat for 5 minutes, folding the omelette halfway through cooking. Serve immediately.
