Thai Chicken Omelette with Mushrooms and Cilantro

Ingredients
- 5 piece eggs
- 150 g chicken breast
- 100 g button mushrooms
- 2 piece green onions
- 1 tbsp fish sauce (nuoc-mâm)
- 1 bunch fresh cilantro
- 1 tbsp sunflower oil
Instructions
Step 1
Finely slice the chicken, cut the mushrooms into thin strips and slice the green onions into rings.
Step 2
Heat the oil in a wok over high heat. Sear the chicken for 2 minutes, add the mushrooms and cook for 1 minute.
Step 3
Beat the eggs with the fish sauce. Pour into the wok over the filling and cook for 2 minutes, folding the edges toward the center.
Step 4
Fold the omelette, plate it and sprinkle with green onions and chopped cilantro.
