Rolled Omelet with Spiced Lamb, Mint, and Lebanese Tomatoes

Ingredients
- 6 piece Eggs
- 200 g Ground lamb
- 2 piece Tomatoes
- 1 piece Onion
- 10 leaf Fresh mint
- 1 tbsp Olive oil
Instructions
Step 1
Mince onion, dice tomatoes, and chop mint.
Step 2
Brown ground lamb with onion in a pan for 5 minutes. Add tomatoes and mint, cook 2 minutes more.
Step 3
Beat eggs, season with salt and pepper. In another oiled pan, cook a thin omelet.
Step 4
Fill the omelet with lamb filling, roll, and serve cut in half.
