Country-Style Omelet with Potatoes and Carrots

- 4 pieces Eggs
- 250 g Potatoes
- 100 g Carrots
- 2 tbsp Olive oil
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the potatoes and carrots into small dice.
Step 2
Sauté the diced vegetables in a skillet with olive oil for 8 minutes until golden.
Step 3
Whisk the eggs with salt and pepper.
Step 4
Pour the eggs over the vegetables, add the butter and cook for 3 minutes until the omelet is set.
